Coffee-shop egg bites are known for their silky, almost custard-like texture. You can get very close at home by blending eggs with cottage cheese and baking them gently in a muffin tin set in a water bath. The low, moist heat keeps them tender rather than rubbery.

Smoked salmon and fresh chives give these a brunch-worthy flavor, and a little cream cheese adds richness. They store all week, and two or three make a satisfying breakfast alongside fruit or whole-grain toast.

The method

  1. Heat the oven to 325°F. Grease a 12-cup silicone or metal muffin pan generously. Set a kettle of water to boil.
  2. Blend the eggs, cottage cheese, cream cheese, salt and pepper in a blender for 20 to 30 seconds until completely smooth and slightly foamy.
  3. Divide the salmon, chives and dill among the muffin cups.
  4. Pour the egg mixture over the fillings, filling each cup about three-quarters full.
  5. Set the muffin pan inside a larger roasting pan and carefully pour hot water into the roasting pan to come about halfway up the sides of the muffin pan.
  6. Bake for 22 to 28 minutes, until the egg bites are just set in the center and no longer wet on top (160°F).
  7. Lift the muffin pan out of the water bath and cool for 5 minutes. Run a thin knife around each bite and pop them out.

Coach notes

  • The water bath is the secret to the soft texture. Skipping it gives you firmer, mini-frittata-style bites.
  • Smoked salmon is salty, so taste a piece before adding more salt to the eggs.
  • Swap the salmon for chopped spinach and roasted red pepper for a vegetarian version.

Make it your way

Serve these with sliced cucumber, cherry tomatoes and a toasted bagel half for a brunch-style plate. They also travel well: pack two or three in a small container with a piece of fruit for a breakfast you can eat at your desk. Silicone muffin pans make release especially easy.

Store & reheat

Refrigerate in an airtight container for up to 4 days. Reheat in the microwave for 30 to 45 seconds. Freeze for up to 1 month; reheat from frozen for about 90 seconds.
